xserver-xorg-video-all pulls in e.g. libdrm-noueveau1
+ xserver-xorg-video-nouveau, something I don't want yet.

Once the libdrm/KMS/kernel<->userspace situation has been resolved I
might reconsider it, but for now I prefer to be explicit instead of
implicit.

Actually, IMHO, better yet is to remove all xserver-xorg-videos but
xserver-xorg-video-all, and all xserver-xorg-inputs except
xserver-xorg-input-all.

Alright, looking at var/log/fai/grml/last/variables.log of your tarball:

  classes='GRMLBASE XORG REMOVE_DOCS RELEASE AMD64'

you didn't select any grml flavour (providing the kernel package) nor did you 
write your own class featuring a kernel package name.

Therefore closing this bugreport.

can't find the source of the problem on your own please provide full
