I could reproduce the problem on my own. The problem is initramfs-tools version 
0.88 which is broken for root=UUID=... I've reported the bug to Debian's BTS, 
see http://bugs.debian.org/cgi-bin/bugreport.cgi?bug=431291

If you want to fix your system on your own just grab and install:

http://snapshot.debian.net/archive/2007/04/18/debian/pool/main/i/initramfs-
tools/initramfs-tools_0.87b_all.deb

and run:

# update-initramfs -c -t -k $(uname -r)

Upgrading to the broken version won't happen to any new systems anymore as I 
put the working version 0.87b into the grml repository (which has a higher apt-
pinning) in the meanwhile.

Sorry, I really can't reproduce that. :(

Is the machine with the problem still available for you? If so it
would be great if I could take a closer look at it next week.

updated with apt-get update/apt-get upgrade (20.6.2007).
Reboot and it doesn´t find the / partition in /dev/disk/by-uuid/...
